Following her lifelong passion for food, after high school Alex attended SITC Tete-de-Ran, a hospitality school in Switzerland before returning to Australia to commence her career in the restaurant and hotel trade.
Alex joined the family company in 1997 and has been instrumental in the development of a unique set of sea salt products including Australia’s first grey salt, Olsson’s Macrobiotic Sea Salt, Olsson’s Sea Salt Flakes, Olsson’s Truffle Salt and most recently the Red Gum Smoked Salt in collaboration with Ross Lusted (The Bridge Room) and Charlie Costello (Pialligo Smokehouse Canberra).
With over 28 years of experience across the food industry, John Susman is best known for his intimate knowledge of all things seafood.
John operates specialist seafood consultancy, FISHTALES, is the Head Judge of the Royal Agricultural Society of New South Wales, Aquaculture Competition and is a restaurant critic for both Fairfax and Murdoch publications. John is also a director of the Fisheries Research and Development Corporation.
With a global network of mates who are best in class fishermen, fishmongers, chefs, retailers and restaurateurs; and a manic love for every aspect of food, John is equally passionate in sharing his knowledge of fresh seafood and food trends, with anyone who’ll listen.
His first book , The Australian Fish and Seafood Cookbook, released in 2016 has become the top selling book on Seafood in Australia’s history.
Pepe is a humble buttermaker from Tempe who is the man behind Pepe Saya Butter Co and a lover of all things dairy. Churning cultured butter and selling their first butter at Carriageworks Farmers Markets 8 years ago, it is now served at restaurants, hotels, in the air and at cafes across Australia and beyond; as well as being the fridges of Australian’s.
Joanne Khawaja aka Jojo is an accomplished Events Producer who has built a name for herself with over 18 years’ experience in Producing events nationally for many brands in the food and lifestyle industry.
Jo's is renowned for her attention to detail and proven track record in delivering meticulously planned, high quality events. Jo can own all aspects from initial concept, schedule, manage your budget, orchestrate teams, manage suppliers and deliver to a timeline.
Jo goes above and beyond to create an amazing experience on your behalf and will ensure the planning process is seamless with a polished end result.

Sophia joined the Olsson’s team in January 2016, and in this time she has worked with chefs and graziers to help put together producer-focused events around Australia, assisted in new product launches alongside Alex Olsson and is excited about what’s to come with LollaProducer 2018.

James White is a true food man. He has worked in every area of foodservice from distributor to dishie over the last 20 years. Through establishing specialty wholesale company Two Providores James developed an innate understanding of dealing with producers. Helping them through the minefield of getting product to market. Telling their amazing stories to chefs and partnering with them on all fronts including sales, marketing, logistics and strategic development. James has recently added the world of all things fishy to his resume joining John Susman at leading seafood agency Fishtales.

Making scruffy producers look awesome since 2012
Martin’s world of gastronomy has seen him doing stints in the kitchen with Paul Bocuse and Rick Stein, working in radio preaching food as an on air presenter with Larry Emdur.
After completing his qualifications as a chef within the International 5 star Hotel system, he eventually chased his own dreams after learning from some influential mentors, embarking on his own Australian restaurant journey he was then drawn into food media as Food editor for 9-5 magazine and becoming one of TV'S first chefs, appearing on Channel 10’s Cheez TV, Segment appearances on Channel 9’s Burkes Backyard, Good Morning Australia and The Today Show whilst juggling running his restaurants.
As a freelance Chef, Martins services are in great demand. From top tier catering and event companies, Martin is renowned as one of the industries number one trouble shooters, which has placed him in high demand for his restaurant and kitchen consultancy skills having now opened 11 restaurants, cafes and bars for clients. In 2016 Martin joined the Kitchen team at Venueslive who are responsible for the 90,000 seat ANZ stadium and other venues in Sydney and Perth.
He has now added brand ambassadorships for worldwide companies Dilmah, Chefs Toolbox, Matador BBQ’s, Breville, Glasslock, Victorinox Knives, Lurpak butter and Barilla, which has had seen him presenting all over the world. Martin hosts a weekly live show, “Chefs Kitchen” on TVSN broadcast through Australia and N.Z.

She has worked for major arts institutions (Opera Australia) as well as wine distributors, wine journalists and PR agencies. Her favourite of part of her job is ‘getting all the right stuff and all the right people in the right place at the right time’.
